Ingredients

For the Potato & Bacon Hash
  • 4 medium potatoes diced, preferably Yukon Gold
  • 6 strips bacon chopped
  • 1 medium onion diced
  • 1 bell pepper diced your favorite color
  • 2 cloves garlic minced
  • 2 tbsp olive oil
Optional Garnish
  • to taste chopped fresh parsley for garnish

Equipment

  • Large Skillet

Method

  1. Step 1: In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set it aside, leaving the rendered fat in the pan.
  2. Step 2: Add the olive oil to the skillet with the bacon fat. Once hot, add the diced potatoes. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are tender and golden brown.
  3. Step 3: Add the diced onion and bell pepper to the skillet. Cook for an additional 5-7 minutes until the vegetables are softened.
  4. Step 4: Stir in the minced garlic and cook for another minute until fragrant.
  5. Step 5: Return the cooked bacon to the skillet, and season with salt and pepper to taste. Mix well to combine.
  6. Step 6: Serve hot, garnished with chopped fresh parsley if desired. Enjoy!
