Ingredients

  • 250 g cooked beetroot Choose fresh or pre-cooked beetroot for convenience.
  • 200 g Saint-Môret cheese This creamy cheese is the star of the dish and adds richness.
  • 100 g Greek yogurt For a tangy kick and added creaminess.
  • 1 tbsp lemon juice Freshly squeezed for the best flavor.

Equipment

  • Blender
  • Small serving glasses or verrines
  • Measuring Spoons
  • Chopping board and knife
  • Spatula

Method

  1. Step 1: If using fresh beetroot, wash it thoroughly, then boil until tender. This usually takes about 30-40 minutes. Once cooked, peel and let it cool before chopping into smaller pieces.
  2. Step 2: In your blender, combine the cooked beetroot, Saint-Môret cheese, Greek yogurt, lemon juice, salt, and pepper. Blend until the mixture is completely smooth. This should take about 1-2 minutes. Make sure to stop and scrape down the sides as needed to ensure everything is well combined.
  3. Step 3: After blending, taste your mixture. Adjust the seasoning by adding more salt, pepper, or lemon juice according to your preference.
  4. Step 4: Once satisfied with the taste, use a spatula to spoon the beetroot mixture into your serving glasses or verrines. Fill them up about three-quarters full to allow space for garnishing.
  5. Step 5: Cover the verrines with plastic wrap and place them in the refrigerator. Let them chill for at least 30 minutes.
  6. Step 6: While your verrines are chilling, finely chop the fresh chives. If you’re using nuts, toast them lightly in a dry pan until golden brown for added flavor.
  7. Step 7: Before serving, remove the verrines from the refrigerator. Garnish each with a sprinkle of finely chopped chives and your choice of toasted nuts.
