Ingredients

For the Spicy Korean Gochujang Noodles
  • 200 g noodles your choice, rice noodles recommended
  • 2 tbsp gochujang Korean chili paste
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey or sugar to balance the spice
  • 2 cloves garlic minced
  • 1 tsp grated ginger
  • 1 tbsp vegetable oil for stir-frying
  • 1 cup mixed vegetables e.g., bell peppers, carrots, broccoli
  • 2 green onions chopped for garnish
  • sesame seeds for garnish

Equipment

  • Large Skillet or Wok

Method

  1. Step 1: Start by cooking the noodles according to the package instructions. Once cooked, drain them and set them aside.
  2. Step 2: In a small bowl, combine the gochujang, soy sauce, sesame oil, honey (or sugar), minced garlic, and grated ginger. Mix well to create a delicious sauce.
  3. Step 3: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the mixed vegetables and stir-fry for about 3-4 minutes, until they're tender but still crisp.
  4. Step 4: Now, add the cooked noodles to the skillet with the stir-fried vegetables. Pour the sauce over the noodles and toss everything together until it's evenly coated.
  5. Step 5: Cook for an additional 2-3 minutes, stirring frequently, until everything is heated through and the flavors meld beautifully.
  6. Step 6: Serve hot, garnished with chopped green onions and a sprinkle of sesame seeds. Enjoy your delicious creation!

Notes

These noodles can be stored in an airtight container in the refrigerator for up to 3 days. When ready to enjoy, simply reheat in a pan over medium heat, adding a splash of water or broth to loosen the noodles if needed.
