- Step 1: In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente, about 8-10 minutes. Stir occasionally to prevent sticking.
- Step 2: Reserve 1 cup of the pasta cooking water before draining the spaghetti. Drain and set aside.
- Step 3: In a large skillet over medium heat, cook the diced pancetta or bacon until crispy, about 5-7 minutes.
- Step 4: Add the minced garlic to the skillet and sauté for another minute until fragrant.
- Step 5: In a mixing bowl, whisk together the eggs, grated Parmesan cheese, heavy cream, salt, and black pepper until well combined.
- Step 6: Add the drained spaghetti to the skillet with the pancetta, tossing to combine. Remove the skillet from heat.
- Step 7: Quickly pour the egg mixture over the hot pasta, stirring vigorously to create a creamy sauce. Adjust consistency with reserved pasta water if needed.
- Step 8: Plate the spaghetti immediately, garnishing with chopped parsley and additional Parmesan cheese if desired.
Notes
The primary difference between this and traditional carbonara is the addition of heavy cream for a richer sauce. You can make it healthier by using whole wheat spaghetti and controlling the amount of cream and cheese.
