Method

  1. Step 1: In a large pot over medium heat, add the Italian sausage. Use a wooden spoon to break it apart as it cooks. Brown the sausage until it is fully cooked, about 5-7 minutes. Drain excess fat if necessary.
  2. Step 2: Once the sausage is cooked, add the diced onion and minced garlic to the pot. Sauté for about 3-4 minutes, or until the onion becomes translucent.
  3. Step 3: Pour in the chicken broth and bring the mixture to a boil.
  4. Step 4: Add the gnocchi to the boiling broth. Cook according to the package instructions, usually about 2-3 minutes.
  5. Step 5: Once the gnocchi are cooked, reduce the heat to low. Stir in the heavy cream, fresh spinach, and Italian seasoning. Let the soup simmer for an additional 2-3 minutes.
  6. Step 6: Taste your soup and add salt and pepper as needed.
  7. Step 7: Ladle the soup into bowls and top with freshly grated Parmesan cheese. Serve hot and enjoy!
