Ingredients

Ingredients

  • 1/2 cup granulated sugar sweetens the coulis
  • 1 tbsp lemon juice adds a refreshing zing
  • 1/4 cup water helps in cooking the raspberries down

Equipment

  • Saucepan
  • Fine-Mesh Sieve
  • Spatula

Method

  1. Step 1: In a saucepan, combine the raspberries, sugar, lemon juice, and water.
  2. Step 2: Cook over medium heat, stirring occasionally, until the raspberries break down and the mixture begins to simmer, about 5-7 minutes.
  3. Step 3: Remove from heat and let the mixture cool slightly.
  4. Step 4: Strain the mixture through a fine mesh sieve into a bowl, pressing down with a spatula to extract as much liquid as possible.
  5. Step 5: Discard the solids and let the coulis cool completely before serving or storing.

Notes

This coulis can be stored in the fridge for up to a week. For longer storage, freeze it in ice cube trays.
