Ingredients

For the Cookies
  • 2.5 cups all-purpose flour providing the perfect texture
  • 1 tsp baking powder helps the cookies rise beautifully
  • 1 tsp baking soda another leavening agent
  • 1 tsp ground cinnamon a warm spice that screams fall
  • 0.5 tsp ground nutmeg adds a cozy, nutty flavor
  • 0.5 tsp ground ginger a hint of spice to warm you up
  • 0.25 tsp salt balances the sweetness
  • 1 cup unsalted butter softened for a rich, buttery flavor
  • 1 cup granulated sugar sweetness is key
  • 0.5 cup brown sugar packed for moisture and a hint of caramel flavor
  • 1 cup canned pumpkin puree the star ingredient
  • 1 large egg binds everything together
  • 1 tsp vanilla extract a classic flavor enhancer
  • 0.5 tsp almond extract optional for extra flavor
  • Additional granulated sugar for rolling

Equipment

  • Oven
  • Baking Sheets
  • Parchment Paper
  • Mixing Bowls
  • Mixer
  • Cookie Scoop

Method

  1. Step 1: Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper to prevent sticking.
  2. Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, spices, and salt. Set this mixture aside for now.
  3. Step 3: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar using a mixer until the mixture is light and fluffy.
  4. Step 4: Beat in the pumpkin puree, egg, vanilla extract, and almond extract (if using) until everything is well combined.
  5. Step 5: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Step 6: Scoop tablespoon-sized portions of dough and roll them into balls. Optionally, roll the balls in granulated sugar before placing them on the prepared baking sheets.
  7. Step 7: Bake for 10-12 minutes, or until the edges are lightly golden. Allow them to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

These delicious cookies can be stored in an airtight container at room temperature for up to a week. If you want them to last longer, consider freezing them.
