Ingredients

For the Cookies
  • 1 cup canned pumpkin puree
  • 1/2 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup chocolate chips or raisins optional

Equipment

  • Mixing Bowl
  • Baking Sheet
  • Parchment Paper

Method

  1. Step 1: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to make clean-up a breeze.
  2. Step 2: In a large mixing bowl, combine the pumpkin puree, brown sugar, granulated sugar, and softened butter. Mix until everything is well combined.
  3. Step 3: Add the egg and vanilla extract to the mixture, stirring until smooth. It should feel creamy and inviting!
  4. Step 4: In a separate bowl, whisk together the cinnamon, nutmeg, baking powder, baking soda, and salt. This step ensures the spices are evenly distributed.
  5. Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. You don’t want to overmix; that can make cookies tough!
  6. Step 6: Gently stir in the rolled oats and flour until fully incorporated. If you’re feeling adventurous, fold in chocolate chips or raisins at this point.
  7. Step 7: Using rounded tablespoons, drop dough onto the prepared baking sheet, spacing them about 2 inches apart for even baking.
  8. Step 8: Bake for 10-12 minutes, or until the edges are lightly golden. The smell will be heavenly!
  9. Step 9: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

These cookies are best stored in an airtight container at room temperature for up to a week. If you'd like to keep them longer, you can freeze them for up to three months.
