- Step 1: Preheat the oven to 400°F (200°C).
- Step 2: Season the pork tenderloin generously with salt and pepper.
- Step 3: In a large oven-safe skillet, heat the olive oil over medium-high heat. Sear the pork tenderloin on all sides until browned, about 4-5 minutes.
- Step 4: Remove the pork from the skillet and set it aside on a plate.
- Step 5: In the same skillet, add the chopped shallot and sauté until softened, about 2 minutes.
- Step 6: Stir in the heavy cream, Dijon mustard, thyme, and lemon juice. Bring the mixture to a simmer.
- Step 7: Return the pork tenderloin to the skillet, spooning the sauce over the top to keep it moist.
- Step 8: Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
- Step 9: Once cooked, remove from the oven, let it rest for a few minutes, then slice and serve with the creamy Dijon sauce drizzled on top.
Notes
Consider swapping the pork tenderloin for chicken breasts or thighs for a different protein. Store leftovers in an airtight container in the refrigerator for up to 3 days.
