Method

  1. Step 1: Prepare the marinade by combining peanut butter, soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, salt, and pepper in a large mixing bowl. Whisk until smooth.
  2. Step 2: Marinate the chicken in the prepared sauce for at least 30 minutes, ensuring each piece is coated.
  3. Step 3: Prepare the ginger slaw by combining shredded cabbage, julienned carrots, and chopped cilantro in a bowl. In another bowl, whisk together rice vinegar, sesame oil, grated ginger, and salt. Pour over the slaw and toss.
  4. Step 4: Heat vegetable oil in a skillet over medium-high heat. Cook the marinated chicken for 6-8 minutes until golden brown and cooked through.
  5. Step 5: Serve the chicken alongside the ginger slaw, garnished with additional cilantro or peanuts if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. The chicken can be reheated in a skillet, and the slaw is best enjoyed fresh.
