Method

  1. Step 1: In a large skillet, heat the olive oil over medium heat. Add the sliced onion and bell pepper, and sauté until they begin to soften, about 5 minutes.
  2. Step 2: Add the minced garlic and cook for an additional minute, stirring frequently.
  3. Step 3: Increase the heat to medium-high and add the minced beef to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  4. Step 4: Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for another 2-3 minutes until the spices are well combined.
  5. Step 5: In serving bowls, layer the cooked rice, black beans, and corn. Top with the beef and vegetable mixture.
  6. Step 6: Garnish with fresh cilantro and serve with lime wedges and any optional toppings as desired.

Notes

If you're looking to mix things up a bit, here are some fun substitutions and additions you might enjoy: Swap out the minced beef for ground turkey or chicken for a lighter option. Add some diced tomatoes for extra juiciness. Use quinoa instead of rice for a protein-packed alternative. If you love spice, consider adding jalapeños or a dash of hot sauce.
