Ingredients

For the Mille-Feuille
  • 1 package puff pastry 2 sheets
  • 2 cups heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons cornstarch
  • 1 cup pastry cream prepared
For Garnish
  • Fresh berries
  • Confectioners' sugar

Equipment

  • Rolling Pin
  • Baking Sheet
  • Parchment Paper
  • Mixing Bowls
  • Whisk or electric mixer
  • Spatula
  • Fork
  • Measuring cups and spoons

Method

  1. Step 1: Preheat the oven to 400°F (200°C).
  2. Step 2: Roll out the puff pastry sheets on a lightly floured surface and cut them into rectangles (about 4 inches by 2 inches).
  3. Step 3: Place the pastry rectangles on a baking sheet lined with parchment paper. Prick the surface with a fork to prevent puffing.
  4. Step 4: Bake in the preheated oven for 15-20 minutes, or until golden brown and crisp. Remove from the oven and let cool completely.
  5. Step 5: In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
  6. Step 6: In another bowl, mix the cornstarch with a small amount of cold milk to dissolve. Combine with the prepared pastry cream and mix well.
  7. Step 7: Fold the whipped cream into the pastry cream mixture gently until fully incorporated.
  8. Step 8: To assemble, layer a rectangle of puff pastry, followed by a layer of the cream mixture, and repeat. Finish with a puff pastry layer on top.
  9. Step 9: Dust the top layer with confectioners' sugar and garnish with fresh berries.
  10. Step 10: Refrigerate for at least 1 hour before serving to allow the layers to set.

Notes

Make it lighter by using coconut cream instead of heavy cream for a vegan version. Store leftovers in the fridge for up to 2-3 days.
