  • ¼ cup cherry tomatoes, halved Adds freshness and a pop of color.
  • 2 tbsp tahini A creamy addition full of flavor.
  • 1 tbsp olive oil For healthy fats and flavor.
  • 1 tbsp lemon juice To brighten the flavors.
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Equipment

  • Cooking Pot
  • Baking Sheet
  • Steamer Basket or Microwave-Safe Dish
  • Mixing Bowls
  • Knife and Cutting Board
  • Measuring cups and spoons
  • Spatula or Serving Spoon

Method

  1. Step 1: Rinse 1 cup of quinoa under cold water. In a pot, combine the rinsed quinoa with 2 cups of water and bring to a boil. Reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it sit for a few minutes before fluffing with a fork.
  2. Step 2: Preheat your oven to 425°F (220°C). Peel and dice the sweet potatoes into small cubes. Toss them in a bowl with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer and roast for 25-30 minutes, flipping halfway through, until they are golden and tender.
  3. Step 3: While the sweet potatoes are roasting, prepare the broccoli. You can steam it using a steamer basket over boiling water for about 5-7 minutes until vibrant green and tender but still crisp. Alternatively, you can microwave it in a microwave-safe dish with a splash of water for about 3-4 minutes.
  4. Step 4: Drain and rinse the chickpeas thoroughly. If you prefer, you can sauté them in a pan with a little olive oil, salt, and pepper for a few minutes to warm them up and add flavor.
  5. Step 5: In a large mixing bowl, combine the cooked quinoa, roasted sweet potatoes, steamed broccoli, and chickpeas. Drizzle the olive oil and lemon juice over the mixture, and season with salt and pepper. Toss gently to combine all the ingredients.
  6. Step 6: Divide the quinoa mixture into serving bowls. Top each bowl with sliced avocado and halved cherry tomatoes. Drizzle tahini over the top and sprinkle with fresh herbs if desired. Serve immediately and enjoy your nutritious Macro Bowls!
