Ingredients

For the Jajangmyeon
  • 200 g fresh wheat noodles providing that delightful chewy texture
  • 2 tbsp vegetable oil a light oil works best for sautéing
  • 150 g pork belly diced
  • 1 medium onion chopped
  • 1 medium zucchini diced
  • 1 medium potato diced
  • 2 tbsp black bean paste (chunjang) the key ingredient for that signature flavor
  • 1 tbsp soy sauce adds depth and umami
  • 1 tbsp sugar balances out the savory notes
  • 2 cups water to create the saucy goodness
  • 1 tbsp cornstarch mixed with 2 tablespoons water for thickening the sauce
For garnish
  • sliced cucumber
  • sesame oil

Equipment

  • Large Pan
  • Pot

Method

  1. Step 1: Start by cooking the wheat noodles according to the package instructions. Once they’re done, drain and set them aside.
  2. Step 2: In a large pan, heat the vegetable oil over medium heat. Add the diced pork belly and cook until it's beautifully browned.
  3. Step 3: Next, toss in the chopped onion, zucchini, and diced potato. Sauté everything until the vegetables are tender, which should take about 5-7 minutes.
  4. Step 4: Now it’s time to add flavor! Stir in the black bean paste, soy sauce, and sugar. Let this cook for an additional 2 minutes to meld the flavors.
  5. Step 5: Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 10 minutes.
  6. Step 6: Gradually stir in the cornstarch mixture until the sauce thickens to your desired consistency.
  7. Step 7: Serve the cooked noodles in bowls, generously topped with the black bean sauce. Garnish with sliced cucumber and drizzle some sesame oil on top. Enjoy!

Notes

If you have leftovers, store the Jajangmyeon sauce in an airtight container in the refrigerator for up to 3 days. Keep the noodles separate to avoid them getting soggy.
