Method

  1. Step 1: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Step 2: In a large bowl, combine the ground beef or lamb, breadcrumbs, Parmesan cheese, parsley, onion, garlic, oregano, salt, pepper, and egg. Mix until everything is well combined.
  3. Step 3: Shape the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
  4. Step 4: Bake the meatballs for 20-25 minutes, or until they are cooked through and beautifully browned on the outside.
  5. Step 5: While the meatballs are baking, prepare the quinoa or rice according to package instructions.
  6. Step 6: In serving bowls, layer the cooked quinoa or rice, cherry tomatoes, cucumber, red onion, olives, and of course, the baked meatballs.
  7. Step 7: Top each bowl with crumbled feta cheese and a generous drizzle of tzatziki sauce.
  8. Step 8: Garnish with fresh parsley and serve immediately.

Notes

Store any leftover meatballs in an airtight container in the refrigerator for up to 3 days. The quinoa or rice can also be stored separately for the best texture.
