How to Make a Cartouche

Learn how to create a cartouche to keep your dishes moist and flavorful while they cook. This simple technique is perfect for enhancing your cooking experience.

Ingredients

For the Cartouche
  • Parchment paper or baking paper

Method

  1. Step 1: Cut a piece of parchment paper into a circle with a diameter slightly larger than the pot or pan you’ll be using.
  2. Step 2: Fold the circle in half to create a semi-circle.
  3. Step 3: Fold the semi-circle in half again to create a smaller triangle.
  4. Step 4: With the pointed end facing you, use scissors to trim the rounded edge of the triangle, creating a curve.
  5. Step 5: Unfold the paper to reveal a round shape, which is your cartouche.
  6. Step 6: Place the cartouche directly on the surface of the food in the pot or pan, ensuring it makes contact with the liquid or sauce to prevent evaporation.

Notes

Make sure your cartouche is large enough to cover the entire surface of the food. If it's not staying in place, you can weigh it down with small pieces of vegetables or a lid.
