Ingredients

For the Easy Pumpkin Cookies
  • 1 cup canned pumpkin puree gives the cookies their moist texture and rich flavor
  • 1 cup granulated sugar sweetness is essential for balance
  • 1/2 cup vegetable oil keeps the cookies soft and tender
  • 1 large egg acts as a binder for all the ingredients
  • 1 teaspoon vanilla extract adds a lovely depth of flavor
  • 2 cups all-purpose flour the base of our cookies
  • 1 teaspoon baking soda helps the cookies rise perfectly
  • 1 teaspoon ground cinnamon a warm spice that complements the pumpkin
  • 1/2 teaspoon ground nutmeg adds a hint of warmth and sweetness
  • 1/2 teaspoon salt enhances all the flavors
  • 1/2 teaspoon baking powder works with baking soda for the right texture

Equipment

  • Oven
  • Baking Sheet
  • Parchment Paper
  • Large Bowl
  • Whisk

Method

  1. Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Step 2: In a large bowl, combine the pumpkin puree, sugar, vegetable oil, egg, and vanilla extract. Mix well until smooth.
  3. Step 3: In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, salt, and baking powder.
  4. Step 4: Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined. Be careful not to overmix!
  5. Step 5: Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. They will spread a little while baking.
  6. Step 6: Bake for 12-15 minutes, or until the edges are lightly golden. Your kitchen will smell amazing!
  7. Step 7: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes
