Ingredients

For the Asparagus Pasta
  • 8 oz pasta such as fettuccine or spaghetti
  • 1 bunch asparagus trimmed and cut into 2-inch pieces
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 lemon zest zest from 1 lemon
  • 1 lemon juice juice from 1 lemon
  • 1/2 cup grated Parmesan cheese
  • salt to taste
  • black pepper to taste
  • fresh parsley chopped, for garnish

Equipment

  • Large Skillet
  • Large Pot

Method

  1. Step 1: Start by cooking the pasta according to the package instructions until it's al dente. Remember to reserve 1 cup of that precious pasta water before draining!
  2. Step 2: In a large skillet, heat the olive oil over medium heat. Add the asparagus and sauté for about 3-4 minutes until it's tender but still crisp.
  3. Step 3: Now, add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
  4. Step 4: Next, stir in the cooked pasta, lemon zest, lemon juice, and half of the reserved pasta water. Toss everything together, adding more pasta water as needed to create a light and beautiful sauce.
  5. Step 5: Remove from heat and mix in the grated Parmesan cheese. Season with salt and black pepper to taste.
  6. Step 6: Serve immediately, garnished with fresh parsley and some additional Parmesan if you like. Enjoy every delightful bite!
