Ingredients

For the Soup
  • 1 lb boneless, skinless chicken breasts perfect for shredding later on
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth the base of our delicious soup
  • 2 cups baby carrots sliced
  • 2 cups fresh spinach for that lovely green touch
  • 1 teaspoon dried thyme a classic herb for cozy dishes
  • 1 teaspoon dried basil adds a delightful aroma
  • Salt and pepper
  • 1 package gnocchi (16 oz)
  • 1 cup heavy cream for that creamy, dreamy finish
  • 2 tablespoons cornstarch optional, for thickening

Equipment

  • Crockpot

Method

  1. Step 1: Start by placing the chicken breasts in the bottom of your trusty crockpot.
  2. Step 2: Add in the diced onion, minced garlic, chicken broth, sliced carrots, thyme, basil, salt, and pepper. Give it a little stir!
  3. Step 3: Cover and cook on low for 6-7 hours or on high for 3-4 hours. You’ll know it’s done when the chicken is fully cooked and tender.
  4. Step 4: Once cooked, remove the chicken and shred it with two forks. It should fall apart easily. Return the shredded chicken back to the pot.
  5. Step 5: Stir in the gnocchi and heavy cream. Cook on high for an additional 30 minutes, or until the gnocchi are tender and fluffy.
  6. Step 6: Just before serving, toss in the fresh spinach and let it wilt into the warm soup.
  7. Step 7: If you want a thicker soup, mix cornstarch with a little water to create a slurry and stir it into the soup. Cook for an additional 10 minutes.
  8. Step 8: Finally, adjust the seasoning as needed, serve hot, and enjoy every comforting bite!

Notes

To store your soup, let it cool completely, then transfer it to an airtight container and refrigerate. It will last up to 3-4 days in the fridge. If you want to freeze it, do so without the cream; when you reheat it, just stir in the cream for that luscious finish.
