  • 1/4 cup chopped onions for a little crunch and flavor
  • 1/4 cup chopped fresh cilantro brings a fresh burst of flavor
  • 1 tsp garlic powder because garlic makes everything better
  • 1 tsp ground cumin adds a warm, earthy taste
  • to taste salt to enhance all those great flavors
  • to taste pepper to enhance all those great flavors
  • Corn tortillas
  • Oil for frying

Equipment

  • Pot
  • Frying Pan
  • Bowl
  • Paper Towels

Method

  1. Step 1: Start by boiling the potatoes in a pot of salted water until they are tender. This usually takes about 15-20 minutes. Drain the potatoes and let them cool slightly before handling.
  2. Step 2: Once cool enough to touch, peel the potatoes and place them in a bowl. Mash them until smooth.
  3. Step 3: Add the grated cheese, chopped onions, fresh cilantro, garlic powder, ground cumin, salt, and pepper to the mashed potatoes. Mix everything together until well combined.
  4. Step 4: Heat oil in a frying pan over medium heat. You want enough oil to cover the bottom of the pan generously.
  5. Step 5: Take a corn tortilla and place a spoonful of the potato mixture in the center. Fold the tortilla in half to create a taco shape.
  6. Step 6: Carefully place the taco in the hot oil and fry until golden brown and crispy on both sides. This usually takes about 2-3 minutes per side.
  7. Step 7: Remove the tacos from the oil and drain them on paper towels to absorb any excess oil.
  8. Step 8: Repeat this process with the remaining tortillas and filling. Serve hot with your choice of salsa or toppings.

Notes

If by some miracle you have leftovers, you can store them in an airtight container in the refrigerator for up to 3 days. To reheat, simply place them in a hot skillet for a couple of minutes to regain that crispy texture.
