Ingredients

For the Salmon Bowls
  • 2 fillets salmon fresh
  • 1 cup cooked rice white or brown
  • 1 cup mixed greens
  • 1/2 cucumber sliced
  • 1/2 avocado sliced
  • 1/4 cup shredded carrots
  • 2 tbsp olive oil
For the Sauce
  • soy sauce
  • honey
  • rice vinegar
  • sesame oil
  • grated ginger
  • minced garlic
  • sriracha
  • sesame seeds

Equipment

  • Baking Sheet
  • Small Bowl
  • Whisk

Method

  1. Step 1: Preheat your oven to 400°F (200°C). This will ensure your salmon cooks evenly and gets crispy!
  2. Step 2: Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil, and sprinkle salt and pepper over the top.
  3. Step 3: Bake for 12-15 minutes, or until the salmon is cooked through and crispy on the edges.
  4. Step 4: While the salmon is baking, prepare the sauce. In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, grated ginger, minced garlic, and sriracha (if you like a little heat).
  5. Step 5: Once the salmon is cooked, it's time to assemble your bowls. Start with a scoop of rice at the bottom, then layer on the mixed greens, sliced cucumber, avocado, and shredded carrots.
  6. Step 6: Top each bowl with a salmon fillet and drizzle generously with the sauce.
  7. Step 7: Finish with a sprinkle of sesame seeds for that extra flair. Serve immediately and enjoy!

Notes

Store any leftovers in an airtight container in the refrigerator. They should stay fresh for up to 2 days. I recommend keeping the sauce separate until you're ready to eat to maintain the crispiness of the salmon and freshness of the veggies.
