Ingredients

For the Chicken Adobo
  • 2 lb chicken legs and thighs preferred
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 1/4 cup water
  • 1 head garlic minced
  • 1 large onion sliced
  • 2-3 pieces bay leaves
  • 1 teaspoon black peppercorns
  • 2 tablespoons vegetable oil
  • to taste salt for seasoning
  • 1-2 pieces green chili peppers optional
  • chopped green onions for garnish, optional

Equipment

  • Large Bowl
  • Large Skillet or Pot

Method

  1. Step 1: In a large bowl, combine the chicken, soy sauce, minced garlic, and black peppercorns. Marinate for at least 30 minutes.
  2. Step 2: Heat vegetable oil in a large skillet or pot over medium heat. Add the sliced onion and sauté until translucent.
  3. Step 3: Add the marinated chicken (reserve the marinade) to the skillet and cook until browned on all sides.
  4. Step 4: Pour in the marinade, white vinegar, and water. Add the bay leaves and chili peppers if using. Bring to a boil.
  5. Step 5: Reduce heat to low, cover, and let simmer for about 30-40 minutes, or until the chicken is tender and cooked through.
  6. Step 6: Taste and adjust seasoning with salt if needed. For a thicker sauce, remove the lid and let it simmer for an additional 10-15 minutes.
  7. Step 7: Serve hot, garnished with chopped green onions if desired. Enjoy with steamed rice!
