Ingredients

For the Carottes Vichy Glacées
  • 1 lb carrots peeled and cut into uniform pieces
  • 2 tbsp unsalted butter
  • 1 cup water
  • 1 tsp sugar
  • Salt
  • Fresh parsley chopped (for garnish)

Equipment

  • Large Skillet
  • Measuring cups and spoons
  • Cutting Board
  • Sharp Knife
  • Wooden Spoon or Spatula
  • Serving Dish

Method

  1. Step 1: In a large skillet, combine the carrots, butter, water, sugar, and a pinch of salt.
  2. Step 2: Bring the mixture to a boil over medium-high heat.
  3. Step 3: Once boiling, reduce the heat to medium-low and cover the skillet.
  4. Step 4: Simmer the carrots for about 15-20 minutes or until they are tender and the liquid has mostly evaporated.
  5. Step 5: Uncover the skillet and increase the heat to medium-high. Cook for an additional 5 minutes, stirring occasionally, until the carrots are glazed and lightly browned.
  6. Step 6: Remove from heat and garnish with chopped parsley before serving.

Notes

Keep an eye on the liquid level while cooking. If it evaporates too quickly, you can add a little more water.
