Ingredients

For the Aglio e Olio
  • 400 g spaghetti Choose high-quality pasta for the best texture and flavor.
  • 6 cloves garlic thinly sliced; fresh garlic adds a robust flavor.
  • 100 ml extra virgin olive oil Opt for a good quality olive oil to enhance the dish.
  • 1 teaspoon red pepper flakes Adjust according to your spice preference.
  • Salt To taste; it enhances the overall flavors.
  • Fresh parsley Chopped, for garnish; adds a pop of color and freshness.
  • Grated Parmesan cheese Optional, but recommended for a rich finish.

Equipment

  • Large Pot
  • Large Skillet
  • Colander
  • Wooden Spoon
  • Measuring Spoons
  • Sharp Knife
  • Cutting Board

Method

  1. Step 1: Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
  2. Step 2: In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden brown, about 2 minutes. Be careful not to burn the garlic.
  3. Step 3: Add the red pepper flakes to the skillet and stir for about 30 seconds.
  4. Step 4: Add the drained spaghetti to the skillet, tossing to coat in the garlic oil. If the pasta seems dry, add reserved pasta water a little at a time until desired consistency is reached.
  5. Step 5: Season with salt to taste and toss in the chopped parsley.
  6. Step 6: Serve immediately, with grated Parmesan cheese on top if desired.

Notes

This dish is naturally vegetarian, and you can easily make it vegan by omitting the Parmesan cheese. Nutritional yeast can be a great substitute for a cheesy flavor.
